Sweat, sunshine and smiles…doesn’t get much better than that!
On this week’s workout and meal plan:
So my husband and I have been eyeing up the instapot and air fryer lately. We only want to purchase one and are trying to decide. So, to settle this domestic debate, we are borrowing them from our friends and trying out a few meals, along with staples like hard boiled eggs, bacon, etc. and making a decision afterwards. This week, we borrowed the air fryer and made donuts (YUM), bacon, hard boiled eggs, wings and a couple dinners. Any tips on deciding? Which do you prefer?
Thursday // Air fryer cajun shrimp dinner was so good and easy! Tons of flavor and ready in a flash.
Friday // Lots of fresh zucchini to use up from my parent’s garden, so made this 3 cheese zucchini stuffed lasagna rolls + kale/brussel sprout salad. I prepped the lasagna earlier in the day so I could just throw it in the oven since we had a busy night post dinner.
Saturday // Leftover lasagna rolls for lunch and out for a birthday dinner cookout with friends!
Sunday // Air fryer recipes with chicken breast, sweet potato fries, and fresh steamed green beans from our garden.
Monday // Kiddo approved, easy dishes for this week since I’m on my own with the kiddos. Tonight is Annie’s mac and cheese with riced cauliflower and ground turkey mixed in.
Tuesday // Another kid favorite: spaghetti and meatballs. If we aren’t feeling that tonight, I might do a picnic/snack dinner (cut up fruit, veggies, cheese, crackers, lunchmeat, etc. and serve it in a muffin tin).
Wednesday // One of my favorite meals: breakfast for dinner! Likely going with pancakes, eggs and sausage links. YUM. I could do breakfast any time of day…it’s my fave!
What I’m loving this week:
Rubbermaid leak proof Brilliance food storage containers // I have a couple sets of these, and they are LEGIT. I read about them from this blogger on her IG stories and have been using them nonstop since. They really are leak proof and have a great seal, and keep my fruits & veggies fresher so much longer versus any other container I’ve tried, including those carbon packet containers. My strawberries have lasted well over a full week! I typically put a dry paper towel to line the bottom of the fruit containers to absorb any excess moisture. I also label my containers with a white marker that I can erase with a magic eraser. I find it so much easier to reach for fresh fruits & veggies when I can see them front and center in my fridge, and they are all ready to go!
