I’ve got a fresh week of dinner meal ideas lined up, along with my fitness plans for you!
Workout wise, I am working through some knee issues. I’ve had some sharp pain on the side of my right knee here and there lately, almost like a pinched nerve. Last Thursday, I had cut a 20 min Peloton run short, then it was fine on Friday. I decided to try the 10k race I had on the calendar on Saturday, and had to stop at mile 2 (it was an out and back) because my knee started hurting again. It was the first time I didn’t finish a race and I was pretty emotional about it. I am trying to take a week or so off, hoping that helps and is nothing more serious. It is INCREDIBLY hard not to workout since it’s such an integral part of my day, but I am trying to slowly incorporate low impact or non leg workouts and ease back into things.
That said, I am not in my usual workout routine, so I am really trying to focus on eating a bit better/cleaner. Breakfasts are usually the same: coffee w/ nutpods, eggs and sausage or a smoothie. For lunch, I try to opt for a salad or something low carb, aiming to limit my dairy and sugar intake. Dinner does involve some carbs, but the meals appeal to the rest of my family, and as long as I don’t mindlessly snack post dinner, I feel better about it.
Other goals this week:
-no snacking after dinner (and if hungry, reach for tea, fruit or veggie)
-drink more water
-put phone away before bed
-make healthy choices throughout the day
-try to rest that knee!
Here’s what is on the menu:
Thursday // instapot orange chicken with broccoli and rice (repeating from last week since alternate dinner plans came up)
Friday // egg roll bowls in the instapot, served with veggie chips for a crunch since I couldn’t find wonton strips at Aldi
Saturday // chicken pesto pasta in the instapot
Sunday // sloppy joes and sauteed green beans
Monday // breakfast bowls for a quick and filling meal before back to school night!
Tuesday // turkey meatballs over edamame pasta I am curious to try from Aldi. Otherwise, I might serve them in a pita with mozzarella cheese.
Wednesday // crock pot chicken salsa thighs with all the fixins: brown rice, corn, lettuce, tomatoes, avocado and cheese
What I’m loving this week:
New headphones! I finally got these on Amazon and love ’em. I have been running with corded headphones since I started running years ago, and finally upgraded to cord free. This pair came highly recommended from my running friend Erin and she was right. And for bluetooth headphones, the price can’t be beat.
Runner’s bra // I just ordered this runner’s bra from Kiava Clothing after going through my sports bras and realizing that several bras needed to be replaced. Love the pocket in the back to hold my phone when I run!
FlavCity // Thanks to a friend’s recommendation (that’s you, Amy!) I have come across Bobby’s IG account, FlavCity. He has great healthy, clean recipes and goes to stores and reviews products. I LOVE his Instastories, and he is so knowledgeable about reading ingredient labels and dissecting nutrition info…and he is from Chicago!
