This week is a busy one, but I’m scheduling in my workouts (I feel so much better when I sweat each day), and making some go-to easy meals to get us through the week!
On the workout and meal plan:
Thursday // Smoked sausage skillet for dinner since we ended up not making it last week, plus tuning in for a live Peloton spin ride before we head out of town.
Friday // Out of town at my parents for a family wedding so using my Peloton app to do four 10-minute strength workouts. The app is SO handy for travel (or for doing workouts in the playroom while the kiddos play with each other…#multitasking).
Saturday // Head out for a run in the morning before the wedding festivities!
Sunday // Headed back home so my freezer stash of Tex Mex Veggies in quesadillas will be perfect since it’s already done! Hoping to end the day with a family walk since I may not be into a full workout post wedding :-)
Monday // Making it a point to incorporate all of our veggies from our garden into our menu. We got a bunch of zucchini from my parents’ garden and this zucchini stuffed lasagna looks like a good one. Freezer friendly too! Workout-wise, a series of strength workouts in the playroom for today.
Tuesday // I have a work event most of the day, so keeping it simple with a bagged salad mix and pizza crust kits that come with sauce. I let Bryce decorate with veggies, cheese and pepperoni– he loves it! Taking today as a rest day since I will be out.
Wednesday // A fun twist on taco night! These taco stuffed zucchini boats are amazing. (I don’t boil the boats like the recipes says– I skip that step and reduce the bake time so they don’t get soggy.) Taking a bootcamp class (combo of treadmill run + strength) to get the day started!

What I’m loving this week:
Kiava striped shorts // Last week, Bryce and I did a local race together– it was so nice to have some alone time with him. Bryce did an amazing job at his kids race..so special to see him improve and enjoy running. We followed it up with a stroller 5k (he’s getting bigger and heavier these days…only a couple more races left to push him I imagine!) I finished in 24:42…not terribly far off from my PR! Wore my new Kiava striped shorts and they were a DREAM. As a gal that never wore shorts to run, I am officially a convert with these. I love the 5 inch inseam, the pocket for my phone and the stripes. It holds everything in and has has non slip grips so the shorts don’t slide up. Plus it’s sweat proof and squat proof and SO perfect for hot race days. What’s not to love?!
Wildscape Meals // I tried out a new frozen meal called Wildscape for when I need a quick lunch during the week with the boys or during work days. It’s definitely a fresh take on frozen meals, and VERY tasty and has a good portion size. They layer the ingredients strategically so they hold their texture when cooking in the microwave. So many other frozen options just turn into mush, but not these. In less than 6 minutes, I had a delicious meal with ingredients I recognized both by sight AND name. They have six varieties, all dairy free, two varieties are gluten-free. Plus, they come in a resealable and recyclable container that I re-purposed for storing single serve portions of soup that I made a big batch of so I have yet another meal at the ready when I need something!
