Last week, we were in northern Wisconsin, enjoying some family time. But this week, I am back at it with the weekly workout and meal plan for you guys!
In my last meal plan post, I mentioned our friendly domestic debate over which kitchen appliance to add to our arsenal: air fryer or instapot. We committed to trying both first (thanks to our neighbors for letting us borrow them for a test run!). This week, is all about the instapot. Personally, I think this is what we will end up with…especially after seeing this fun gadget that converts the IP to an air fryer! Nevertheless, I’ve got lots of recipes lined up for the week to test in the instapot.
Here’s what’s on the menu:
Thursday // IP chicken parmesan over zoodles. I use this Kitchenaid attachment for the zoodles– works SO well.
Friday // IP chicken wings and brussel sprouts
Saturday // IP sloppy joes, green beans, corn on the cob (sidenote: we bought two cases of corn from a local farm and plan to process & freeze it to use throughout the year– so worth the work because you can’t beat the taste!) // also looking forward to this 10k race!
Sunday // IP chicken taco chili with rice
Monday // for meatless Monday, these veggie lasagna zucchini boats
Tuesday // IP orange chicken with cauli-rice
Wednesday // cheesy beef goulash with macaroni
Throughout the week, I also plan to hard boil and poach eggs in the IP too!
What I’m loving this week:

So far, I’ve tried their peanut butter and almond spread with milk chocolate. Both are smooth and delicious. I also used them to make granola with this recipe…doing a peanut butter batch and the milk chocolate almond spread. It is SO tasty on its own as a snack, or topped over ice cream or yogurt!
