This past weekend, Bryce was baptized. It was a truly wonderful day! After church, we invited our family over for a big celebration. We had quite the large crowd, and were busy cleaning and prepping food in the days leading up to the party (which is no easy feat with a 7 week old!)
Bryce’s baptism party seemed to kick off the start of summertime get togethers. Summer always comes with a busy social calendar full of events and activities….and tasty foods. It’s so easy to eat mindlessly and realize later that you’ve overindulged–I’ve definitely done that before! So when we were planning the menu, we knew we wanted to offer a wide array of healthy options for our guests. We had quite the spread of food, including fresh fruits and vegetables, sandwiches and a few sides. I was definitely on the hunt for simple recipes that were quick to put together.
One of those recipes was for Roasted Red Pepper Cheese Spread via SWEET SWAPS. The SPLENDA® Brand is dishing out ways to reduce added sugar by swapping out full sugar for SPLENDA® Sweetener Product. It was so easy to make, and tasted great! (And random fact: did you know that swapping just one cup of sugar with one cup of SPLENDA® No Calorie Sweetener can save more than 600 calories? That makes a huge difference!)
Roasted Red Pepper Cheese Spread Recipe via SWEETSWAPS.com
Servings Per Recipe: 16 (Click here for nutrition info)
Serving Size: about 2 tablespoons
INGREDIENTS
- ½ cup roasted red peppers, well drained, finely chopped
- 2 tablespoons SPLENDA® No Calorie Sweetener, Granulated
- 2 cups sharp cheddar cheese, shredded
- 2 tablespoons red onion, finely chopped
- ½ cup mayonnaise
- 1 teaspoon cider vinegar
- ¼ teaspoon black pepper
DIRECTIONS
- Mix all ingredients together in a small mixing bowl. Refrigerate until ready to serve. I told you it was easy!
After we ate, some of us decided to move around a bit and play with Izzy and start a friendly game of bags (or cornhole, depending on where you are from). It was nice to take advantage of the nice weather (before the rain came!) and burn some calories while still enjoying each other’s company.
It was a fantastic day all around- so nice to spend time with family and celebrate Bryce’s baptism! Here’s to many more summer parties!
