Just recently, I shared my tips and tricks for how I got my toddler to eat his veggies. But what about me? I know how good vegetables are for your body, and it’s one area where I know I can improve…especially after over-indulging at Thanksgiving where I ate all.the.carbs. So today I’m sharing a few ways that I sneak in my veggies. (Spoiler alert: I’ve found it’s not that hard, even if you have a busy, on-the-go life! Just takes a little planning.)
Recently, I became the proud owner of a blender/food processor (thanks Mom & Dad!) So for breakfast, I’ve been making a smoothie. It’s great to drink on my hour long commute into work and takes a few minutes of prep. Lately, I’ve been loving this green smoothie which consists of 1 banana, ice, vanilla protein powder, powdered peanut butter, almond milk and a handful of spinach.
For lunch, on the days when I am at work, I try to pack my lunch and bring it along. Some days, it just gets busy getting out the door so grabbing these MorningStar Farms® Veggie Bowls are super easy for me. I grab a few to have on hand at my local Jewel when I do my weekly grocery shopping so I have some quick and easy options at my fingertips.
These Veggie Bowls are incredibly tasty and pack a ton of flavor. My favorite is the Italian Sausage Bake, which has spinach, zucchini, Veggie Sausage Crumbles™ and cheese layered with spices. YUM.
When the afternoon snack attack hits, I’ve found it’s really helpful to have veggies pre-cut and ready to grab to encourage good choices. And it doesn’t hurt to add some tasty hummus to it either…
And for dinner, I always try to include veggies in the meal as either part of the entree or as a side dish or salad. I’ve been roasting a lot of vegetables in big batches and they are really tasty. My favorites to roast are broccoli and cauliflower with a little olive oil, garlic, salt and fresh lemon juice.

Green smoothies are totally my jam! Great way to pack in those veggies!
My husband and I are vegans so we know all about vegetables. My suggestions are: add some berries in that smoothie! All kinds. Blue berries are incredibly healthy. Take out the peanut butter powder because the calcium/phosphorus ratio is way off in peanuts and it will deplete your bones of calcium. Almonds are much healthier in that regard. Also, an amazing way to use cauliflower. Slice it like a steak, brown both sides of it in a pan using earth balance soy free buttery spread ( we found that is caramelizes food the best) and then at the end, throw in some kale and garlic. The kale should wilt just a little.. Slice and toast ciabatta bread in the oven. When the bread is done, put the browned cauliflower steaks on a slice of the bread and top with the wilted kale and garlic, add some Veganaise ( which is a cruelty free and much healthier mayo option made with grape seed oil ) and top with another slice of ciabatta bread. Dinner is served! Instead of that morning sausage, try Tempeh which contains probiotics or field roast sausage which is actually made from legumes. You can’t imagine how much healthier Field Roast sausage is than real sausage and it tastes great! Field Roast products don’t hurt animals or your arteries. They have other meat substitutes as well.
