Workout + Meal Plan: Week of July 15, 2019

Back at it with a fresh workout and meal plan for the week ahead!


Hey, it’s all about balance, right?!

This week’s meal plan:
I’ll be honest: I’ll be adjusting this week’s meal plan (and last week’s), repeating the meals we didn’t do in the next couple weeks. When your spouse unexpectedly leaves for over a week for work, your meal plans kind of go out the window. But regardless, these meals are all going to be quite tasty, with some easy standbys and a few new recipes mixed in:
White bean and sausage soup // Soup in summer? I know, but I just watched Pioneer Woman’s latest show, and it looked amazing. So giving it a go!
Greek chicken and orzo pasta salad // Another find from Food Network’s The Kitchen (one of my favorite shows- I learn so much from it!) The dish is perfect as a side dish at a get together, or main entree.
Smoked sausage skillet // A family favorite and comes together pretty easily.


After about 4 days off, I am SO glad to be back to my workouts. I missed my daily sweat sessions!

For the workouts:
I ended up tweaking my back pretty badly on a strength workout at the end of last week. I went a bit too hard, thinking I was tough stuff, and then my back got angry with me. Like I can’t hold my 1 year old son or sit in a chair comfortably type situation. Needless to say, I was out for about 4 days, taking advantage of the heating pad and Motrin whenever possible because #soloparenting. I finally feel 100% and am anxious to get back into my regularly scheduled workouts. SUPER excited to hopefully get to a barre class too…it’s been forever!

What I’m loving this week:
Two AMAZING (and low calorie) summer treats:
Frozen Hot Chocolate // I made my own chocolate syrup for this, which was surprisingly easy and SO much tastier than the stuff you find on the shelves…)
Cherry Slushie // I always keep a big supply of flavored sparkling water, and this has summer written all over it!

    • We enjoyed some gorgeous greenery at the domes today. It was like we were on a tropical island with all the lush vegetation... almost In awe of such beauty, especially when snow is stacked high and temps are so low all around us.
    • Over the last five+ years of being a mom, my style has evolved quite a bit. Gone are the days of being dressed for the office every day. Now my work-from-home life meets stay-at-home mom life requires what I wear to be both comfortable and practical without sacrificing style. I still love getting myself put together for the day, even if that means a day of working at home, running errands and playing outside.
