This past week’s dinner plan had some pretty tasty meals. And for the past three weeks, we are doing pretty great on this 30 day no eating out challenge. Weekends are tough since we aren’t in our weekly routine, so the temptation to eat out is strong, but we have been resisting. Menu planning has helped a TON, and it not only usually healthier than eating out, but also much cheaper. We have one more week to go, though I think we will continue to stick to this as much as we can. Will be sure to share some feedback on the dollars of it all too!
White Bean Turkey Chili // a tasty chili without tomatoes. Plus, it feeds a crowd…I froze leftovers in individual containers for lunch for T or I.
Carne Asada Fries // These were so good the other week, we made them again. I made fresh pico de gallo since we had ingredients on hand and it was oh so good.
Philly Cheesesteak Air Fryer Egg Rolls // The actual recipe is from Skinnytaste’s One and Done cookbook, but the one I linked to it close. The whole meal is made in the air fryer: steak first, then veggies, then the rolls themselves. DELICIOUS!
Air Fryer Chicken Breast + Roasted Cauliflower + Quinoa // a simple meal with the air fryer (and stovetop for quinoa).
We rounded out the week with a taco night and burgers on the grill the other nights of the week (and one meal at our son’s school for a family event).
I also made these salted candy blondie bars (THE BEST) to bring along to a school event, and these broccoli and cheese egg muffins (plus bacon) for easy breakfasts.

Risen Motherhood // I have been making it a goal to read a bit before bed each night (and sometimes in the mornings with a cup of coffee before the kiddos wake up). It’s been wonderful. I got my hands on Risen Motherhood (which started as a podcast), and it is SO good. Great for a book club too with discussion questions at the end of each chapter. Seriously, can’t say enough great things about it…I think I may end up buying this because I can envision myself reading it over and over again.
Running outside & listening to podcasts // Listening to podcasts is my new jam…multitasking at its finest. Whether it’s a run outside, while I wash dishes or fold laundry at night, it’s been a great form of entertainment. Here are my top five right now:
