With Baby P due in just a few weeks, I am nesting and getting things in order for his arrival. One of the things on my to-do list was to make some freezer meals to have on hand for dinner. So my Mom came over, we picked out our recipes, went grocery shopping and got to it! In the end, we ended up making 20 meals (servings) in just under 3 hours. Here’s what we made: Broccoli Pie (doubled the recipe)- 4 meals This recipe is from my mother-in-law. Hearty, delicious and super Read More
What I Ate Wednesday: Zucchini Edition
Lately, I’ve been on a bit of a zucchini kick. I blame it on my parents, who have a huge garden and have been giving us tons of fresh vegetables- including zucchini. That said, I wanted to share a few recipes I’ve whipped up lately featuring it! 1- Zucchini Pizza Bites My Mom made these as an appetizer and they were SO good! Totally guilt free and satisfies your craving for pizza! Source: Skinnytaste (how they are supposed to look) Zucchini Pizza Bites, adapted from Read More
Weekend Recap from Up North
This past weekend, the hubs and I celebrated our 5 year wedding anniversary and headed up north to the cabin in Wisconsin for some R&R! So nice to take an extended weekend to relax with my love! Lots of outdoor time with plenty of fresh air! We took Izzy out on the dock and needless to say, she isn’t much of a water doggy. More princess genes than adventurous ones I suppose! Ate some delicious meals, including pancakes with real maple syrup collected from the trees outside, steak kabobs Read More
Workout Plan and Hungry Girl Diet
Well March certainly went by fast, am I right? Hard to believe that I am five weeks out till the half marathon! After enduring long runs on the treadmill, this was my FIRST outdoor run on the trails! I met Kim for a nice 10 miler at the local forest preserve. The first loop was great and the ground was still a little hard, but by the second loop- everything was super mushy from the sun. Needless to say, my feet were soaked afterwards! Photo courtesy of Kim This week’s training plan Read More
Emotions, Eats and Exercise- 2nd Edition
Emotions Due to polar vortex #2 sweeping through Chicagoland, we were strongly encouraged to work from home on Monday and Tuesday. But this time, I was much more aware of my food choices (and I think my food journal was a large part of that.) Eats Unfortunately, I found that I did use food when I was stressed this week: I Read More
Packers and Puffer Vests
Hope everyone had a nice weekend! Ours was jammed packed with lots of fun stuff (which was my goal before I go back to my first full week of work tomorrow after a super long holiday vacation. Wa waaaa.) On Friday night, Tyler and I went to see This is 40 with a Groupon I had. It was really funny but a little on the long side. I was hoping that Seth Rogen and Katherine Heigl would make an appearance, but no such luck. Still pretty hilarious in my opinion! Saturday started out as a lazy Read More
Healthy recipe gems
I'm sure everyone has Thanksgiving dinner on the mind right now (me included!), but I wanted to share a couple of "hidden gems" that I've made the past week that are super delicious AND healthy! Imagine that! So the first is a homemade granola. My boss brought in a batch and I couldn't stop eating it! Most store-bought granola is pretty high in calories and sometimes fat & sugar. So being able to make it from scratch allows you to control what goes in it and customize it to your Read More
