I’m always on the lookout for easy dishes that I can make for dinner that don’t take forever to make. This one is ready in 30 minutes, packs a ton of flavor and is a one pot dish. Anything that minimizes dishes is a win in my book. (Dishes are the worst part of cooking in my opinion, who’s with me?!)
(I used Kielbasa sausage and just a little Cajun seasoning so it wasn’t be too spicy for Bryce or me, but if you love the heat, use Andouille sausage and add more Cajun seasoning to taste.)
One Pot Red Beans and Rice // adapted from Iowa Girl Eats
Serves 4-6
Ingredients:
2 Tablespoons extra virgin olive oil
1 green bell pepper, finely chopped
2 stalks celery, finely chopped
1 shallot or 1/2 small onion, finely chopped
1 tsp Cajun seasoning
12oz gluten-free Kielbasa sausage, sliced
3 cloves garlic, minced
1-1/2 cups long grain white rice
15oz can red beans, drained
2 cups chicken broth
15 oz can diced tomatoes, with liquid
Directions:
Heat oil in a large Dutch oven or pot with high sides over medium heat. Add sliced sausage to pot and sauté until slightly brown. Then remove sausage to a plate. Add bell pepper, celery, and shallots, season with Cajun seasoning to pot then sauté with the lid on, stirring occasionally, until vegetables are nearly tender, 5 minutes. Turn heat up to medium-high and continue sautéing with the lid off until vegetables are tender, 5 minutes. Add garlic then sauté 30 seconds to 1 minute.
Add rice, red beans, diced tomatoes, chicken broth, then turn heat up to high to bring broth to a simmer. Place the lid back on top then turn heat down to medium-low and simmer for 10 minutes. Take the pot off the heat then let sit for 5 more minutes, covered, before removing the lid and fluffing with a fork. Taste then add more Cajun seasoning if desired and serve.
