Man, do I love a cobb salad. There is so much awesome stuff going on: crispy greens, eggs, bacon, tomato, fresh veggies, cheese, the list goes on. I’ve seen them made with an array of ingredients and all of them are heaven on a plate.
The other day, I made a cobb salad for lunch that was to die for…something about the combination of the ingredients and the dressing that was oh so yummy, so I had to share in the deliciousness. You’re welcome :-)
Here’s what I used:
Italian Mix
Cucumber, diced
Bacon, chopped (I prepared mine in the oven)
Cherry tomatoes
Hard boiled egg, sliced
Shredded cheese
Litehouse Avocado Ranch with Bacon
Optional: chicken, avocado, bleu cheese crumbles, croutons, scallions, whatever floats your boat!
The rest is simple: just start with a bed of fresh lettuce, then arrange your toppings in different piles or lines on the plate before drizzling the dressing all over the salad. It’s certainly not hard to make, but I enjoy making it look worthy enough to be featured on the Food Network, because that’s how I roll.
The secret to a killer cobb salad is a great dressing. I used Litehouse Avocado Ranch with Bacon to complete the dish and OH MY GOODESS it is delicious. Creamy, flavorful and rich. It is made with real bacon and really brings out the bacon in the salad (because you can never have enough bacon.) And you can definitely taste the avocado in there too, which was perfect because I didn’t have any avocado on hand. It’s good stuff. And you can even use this dressing as a chip dip or spread…perfect for football season that’s right around the corner!
And if you wanted your Cobb Salad to have a slightly different flavor profile, you could try Litehouse’s Homestyle Ranch, Jalapeno Ranch, or Chunky Bleu Cheese dressings. They can all be found in the refrigerated produce section of your local Chicago supermarket. And honestly, I prefer to buy my dressings in this section: a cold, glass-bottled dressing is much better and more fresh-tasting than the stuff you find on the shelves. #SoldinCold

You know, my husband and I are vegans. It’s been so long since we’ve eaten in this fashion, that it seems strange. He called this the serial killer salad. If you would like to try something a little less killer and a little kinder, there are so many wonderful substitutes that are truly healthier. For instance Lightlife Smart bacon which is a meatless product. ! A slice of bacon has 4 grams of fat and contains saturated and mono saturated fat. Lightlife, on the otherhand, has 1 gram of fat and is all good fat, plus the animals don’t have to suffer. Sauteed tofu is a wonderful substitute for eggs. It has a similar texture, is cholesterol free, loaded with complete proteins and the sweet birds don’t have to suffer. Daiya cheese makes almond cheese and the cows don’t have to spend a lifetime in pain. (I had the Montery Jack style this morning and it was scrumptious. ) There is also no need to dump a bunch of salad dressing on a salad. Just use red wine vinegar. When you limit your consumption of animal and animal products, your body and mind and soul will be rewarded. What a wonderful legacy to offer to your family.
