I love having a stash of energy bites in the freezer. They are packed with protein and have no added sugars, and are perfect for a quick snack. The boys love them in their lunch boxes as their “dessert” too. I’ve made lots of variations of these including oats, nuts, chocolate chips, dried fruit, etc. but these are a new-to-me, super easy recipe and I’m loving them!
Easy DIY Protein Energy Bites
Makes approx 32 bites / 1 bite per serving
INGREDIENTS
1/2 cup natural peanut butter
1/2 cup natural almond butter
1/2 cup honey
1 serving vanilla protein powder (I use Orgain plant-based protein powder)
1 tsp. vanilla extract
pinch of sea salt
pinch of cinnamon
1.25 cups Kodiak Cakes mix (I used regular, but feel free to try their other flavors!)
DIRECTIONS
Mix all ingredients together either in a bowl or stand mixer. Add Kodiak Cakes last. Mix well in stand mixer, or just get in there and use your fingers to incorporate everything together.
Using a small cookie scoop, scoop into balls and place in air tight container. Put in freezer to firm up before eating right away.
These bites are best stored in the freezer and eaten cold.
