These blender banana oatmeal muffins are a staple in our house. Not only are they healthy and packed with good-for-you ingredients that you probably already have on hand, but also have no added sugar, are super easy (no bowl required!) and can be customized based on your tastes.
I got this recipe from a friend and added my own tweaks to it. It’s a keeper for sure! And I love how you can customize the muffins based on your taste with nuts, fruit, chocolate, etc.
The recipe makes 12 regular sized muffins and 24 minis. They are perfect for a quick breakfast, snack or even to pack in your kids’ school lunches. They freeze well too!
PS- I highly recommend silicone muffin liners– makes for super easy clean up and no sticking!
Blender Banana Oatmeal Muffins
Yields 12 regular muffins + 24 minis
Ingredients
2 cups oats
3 ripe bananas
2 eggs
1 cup Greek yogurt (any kind- plain or vanilla are faves!)
1.5 tsp baking powder
.5 tsp baking soda
.5 tsp vanilla
.25 tsp salt
1 tbsp flax seed
1 tsp cinnamon
Optional add ins:
Choice of: chocolate chips, nuts, lemon zest, blueberries, powdered peanut butter (either as topping or mixed in, based on preference)
* can also add 2-3 tbs honey or pure maple syrup if you want sweetness. I would not add this if I was using chocolate chips because the sweetness is already there!
Instructions
1. Preheat oven to 400 degrees. Spray muffin tins or line with silicone liners.
2. Add oats to blender and pulse.
3. Add remaining ingredients and blend.
4. Top with your optional add ins like chocolate chips, nuts, blueberries, etc. (If you are using lemon zest or powdered peanut butter, you should add that to the blender so it will be throughout your muffins.)
5. Bake for 18 min at 400 degrees.
6. Cool then store in airtight container. Eat within a week, or pop in the freezer!
