Blender Banana Oatmeal Muffins

September 9, 2020

These blender banana oatmeal muffins are a staple in our house. Not only are they healthy and packed with good-for-you ingredients that you probably already have on hand, but also have no added sugar, are super easy (no bowl required!) and can be customized based on your tastes.

I got this recipe from a friend and added my own tweaks to it. It’s a keeper for sure! And I love how you can customize the muffins based on your taste with nuts, fruit, chocolate, etc.

The recipe makes 12 regular sized muffins and 24 minis. They are perfect for a quick breakfast, snack or even to pack in your kids’ school lunches. They freeze well too!

PS- I highly recommend silicone muffin liners– makes for super easy clean up and no sticking!

Blender Banana Oatmeal Muffins
Yields 12 regular muffins + 24 minis

Ingredients
2 cups oats
3 ripe bananas
2 eggs
1 cup Greek yogurt (any kind- plain or vanilla are faves!)
1.5 tsp baking powder
.5 tsp baking soda
.5 tsp vanilla
.25 tsp salt
1 tbsp flax seed
1 tsp cinnamon

Optional add ins:
Choice of: chocolate chips, nuts, lemon zest, blueberries, powdered peanut butter (either as topping or mixed in, based on preference)
* can also add 2-3 tbs honey or pure maple syrup if you want sweetness. I would not add this if I was using chocolate chips because the sweetness is already there!

Instructions
1. Preheat oven to 400 degrees. Spray muffin tins or line with silicone liners.
2. Add oats to blender and pulse.
3. Add remaining ingredients and blend.
4. Top with your optional add ins like chocolate chips, nuts, blueberries, etc. (If you are using lemon zest or powdered peanut butter, you should add that to the blender so it will be throughout your muffins.)
5. Bake for 18 min at 400 degrees.
6. Cool then store in airtight container. Eat within a week, or pop in the freezer!

My little sous chef and I love to make these together…they couldn’t be any easier! Let me know what flavor(s) you try in the comments below!

    • Over the last five+ years of being a mom, my style has evolved quite a bit. Gone are the days of being dressed for the office every day. Now my work-from-home life meets stay-at-home mom life requires what I wear to be both comfortable and practical without sacrificing style. I still love getting myself put together for the day, even if that means a day of working at home, running errands and playing outside. So I put together three practical yet stylish outfits featuring some tried and true clothing favorites from @everlane, a brand I love for quality, ethically made items.

    • #ad No matter what your dietary preferences might be, give @planetoat a try! I started a few years ago when I ditched the coffee creamer and now opt for a non dairy option. Planet Oat now has unsweetened flavors (original and vanilla) with zero grams of sugar and just 45 calories per serving! The taste is great, creamy and works well straight up in a glass, in coffee as a creamer substitute or mixed in a smoothie or overnight oats. Lately, I' src='http://the-style-files.com/wp-content/plugins/instagram-slider-widget/assets/image.png' class='GraphSidecar' style='opacity: 0;'>
