With Baby P due in just a few weeks, I am nesting and getting things in order for his arrival. One of the things on my to-do list was to make some freezer meals to have on hand for dinner. So my Mom came over, we picked out our recipes, went grocery shopping and got to it! In the end, we ended up making 20 meals (servings) in just under 3 hours. Here’s what we made:
Broccoli Pie (doubled the recipe)- 4 meals
This recipe is from my mother-in-law. Hearty, delicious and super flavorful!
Ingredients:
-pie shell
-1 lb ground beef
-1/2 cup onion
-2T flour
-3/4 tsp salt
-1/4 tsp garlic
-3 oz cream cheese
-1 cup milk
-1 egg
-10 oz cooked broccoli (16 oz frozen works)
-2/3 lb monterey jack cheese
Brown and drain ground beef and onion. Add flour. Stir in salt, cream cheese and garlic. Add milk. Stir until bubble. Beat egg and add to ground beef mixture. Stir until thick. Add broccoli. Place mixture in unbaked pie shell and cover with sliced cheese. Add the top crust and seal edges. Bake at 350 for 45-60 minutes. (If using frozen broccoli, bake for 60-75 minutes).
Taco Chicken- 2 meals
We took a large package of chicken breast and cooked it all. Once the breasts were cooked through, we did the old trick where you put them in the Kitchenaid mixer and let it go (but not too long!) Then, I split half of it and seasoned one half with taco seasoning and put it in a freeze proof container. Will be perfect to throw in tacos!
Chicken Noodle Soup (doubled the recipe)- 6 meals
We used the other half of the chicken breast for the soup. It’s a classic and WW friendly with 4 points per 2 cup serving. Recipe is here.

So there you have it- 5 recipes, yielding 20 meals! It really went fast with two people and a good game plan. So thankful my Mom was able to help me with this! Now our freezer is stocked up and ready to go so T and I can treat ourselves to some delicious home-cooked meals when Baby P arrives!

I had no idea you could shred chicken in a kitchen aid mixer! I think I use my mixer 3 times a year– good trick! Way to go on the prep- I did the same thing with lots of soup… I made more lunch food for when I was at home with B and then once he came I did lots of crock pot meals. You are getting SOOO close!

I love this idea but haven’t had a chance to try it yet…. I’m interested in it though. OnceAMonthMeals.com gives you an entire meal plan for a month that you apparently can cook in one sunday…..
Oh wow- that’s a neat concept! I’ve also pinned a ton of meal plans/grocery lists and menus for freezer meals- some are more in depth than others but there is so much out there!
Wow that was ambitious, and everything looks so good! I love being able to pop things out of the freezer like that.
It’s going to be such a time saver for sure! I was surprised at how little time it truly took to have all those meals ready to go!
One of my favorites is this Middle Eastern Pork Tenderloin recipe. I love that I toss all the ingredients in a freezer bag and put it in the freezer. I just take it out the night before I want to make it to thaw, dump it in a casserole dish and bake when I’m ready. Serve it with couscous (which takes all of 5 minutes to make) and you’re done!

I like the idea of the freezer bag and either baking or throwing in the Crock pot. I hope to make some of those soon too!
Another one I like is this Honey Chicken recipe. The recipe is for skewers but you could easily marinate or cook the chicken thighs whole instead of cutting them up.

This is going to be so helpful for you! My mom made meals for me before I gave birth and it was nice to have one less thing to worry about!
I think it will help my sanity out a ton! My MIL is making us a few more things too so we should be all stocked up!

We actually tried one of the Lasagna Roll-Ups for dinner last night (it looked so good I couldn’t wait). It was DELISH but actually could have used a bit more sauce- even just a jar of spaghetti sauce sprinkled over the top. Tasty!
Good for you! This is on my list to do in the next couple of weeks – I have my ideas of what meals to prepare, but I need to make sure I have freezer space! I think I might end up doing more gallon bag recipes that I can throw into the crockpot. Can’t believe how soon our babies will both be here!

When one of my friends had a baby I made two pans of this Italian Ravioli Casserole and put them in the freezer. I’m not sure how they reheated them but I do know they said they were really tasty!
I also have a GREAT cornbread recipe that freezes really well as well as some chili recipes that go from pot to freezer bag to crockpot (no thawing necessary) if you want those, too.
That looks awesome. I’m sure it would reheat great (our lasagna roll-ups did fine- busted into one early lol, so a similar pasta dish would too I would think!)
And yes– can you share these other recipes?! The cornbread one in particular sounds awesome!
You will be so happy to have these in your kitchen once that baby arrives. :) Cooking will probably not be on your short list of things you’ve motivated to do other than take care of the baby – haha.
